In a large bowl, combine ground meat, grated onion, garlic (if using), turmeric, black pepper, salt, and saffron water (if using). Mix well until fully incorporated.

Optionally, cover and marinate the mixture in the refrigerator for a few hours or overnight.

Form the meat mixture around skewers, creating sausage-like shapes about 3/4 inch thick.
